Handing out grilled Banana Bread at a London Coffee Festival was like a dream come true. We had the festival folk levitating towards our stand with coffee cups in their hands, looking for that perfect treat to pair with their specialty coffee.

Finding us wasn’t difficult either. The smell of freshly toasted Banana Bread was doing most of the heavy lifting. But the thing that really tipped people over the edge was what went on top. Homemade whipped cinnamon butter.

This wasn’t some carefully planned product launch. It was an Ollie special. A last-minute, throw-it-together invention that ended up becoming one of the most talked about things on the stand. We grilled slices of Banana Bread, slathered them generously, and watched people come back for seconds. Some even asked if we sold tubs of the stuff.

 

We don’t.

But we did have a bit of a lightbulb moment. This isn’t just a festival trick. This is exactly the sort of easy little extra that can turn a simple slice into something people tell their mates about and come back for. So naturally, we thought we’d share it.

So here it is, a recipe for success:

Cinnamon Whipped Butter

Salted butter, softened 200g
Soft light brown sugar or Muscovado 30g
Ground cinnamon 10g
Vanilla extract 5g
Maple syrup or honey 30g

Method

Whip the softened butter for 3–5 minutes until pale and fluffy.
Mix the cinnamon into the sugar first, then add it to the butter with the vanilla and maple/honey. Whip again until smooth, airy and thoroughly combined.
